The Chip Butty, so I'm told, is a British institution.

Ingredients:
Lots of fat greasy chips (French Fries*)
White stodgy, sliced bread  (i.e. Wonder Bread)
Butter
Ketchup (brown** or tomato, depending on preference)

Cooking Instructions:
Cram tons of chips between two slices of buttered bread.
Cover liberally with ketchup.
Nosh, Trough and generally masticate until you feel incredibly full and generally unwell.
Wash down with copious quantities of Real Ale

* British chips tend to be fatter, more squishy and greasy than french fries.

**Brown sauce (HP sauce) is an English kind of deal - tastes an awful lot like Heinz 57 sauce.

*Follow directions for chip butty, substituting Tater Tots for the French Fried potatoes

French Fry Po' Boy


Probably the original and quintessential "Poor Boy", thus it is meatless besides the brown meat gravy it is dressed in.

South of the border is the:

1-2 Potatoes
1-Jalapeno
Half Onion
1-small tomato
Flour Tortillas (6)

Peel your Potatoes and start a pan of 3 tbs of oil to heat up. Cut your potatoes into squares and put into hot pan of oil. Cut up the onions into tiny chopped pieces and put them in with the potatoes...cover with lid and set to simmer. Cut the Jalapeno into slices like a pickle. After 10 mins put Jalapeno slices into same pan. Chop up the tomato and add after Jalapenos. Let whole pan simmer for 20 mins after this. In this time the onions will get super transparent and the potatoes will be extra soft. The Jalapenos will add the spice to the mixture. Test the Potatoes and see if they are done. After which put a heaping spoonful into each heated tortilla.
