
Gorgonzola Pear Flan
1/4 cup plus 2 tbsp crumbled gorgonzola cheese
1 12 oz carton low fat cottage cheese
2 eggs
vegetable cooking spray
2 Bosc or Bartlett pears, cored and thinly sliced
1 tbsp lemon juice
1 tsp honey
1/2 teaspoon crushed rosemary
Combine first 3 ingredients in a blender and process until smooth. Pour cheese
mixture into a 9 inch pie plate coated with cooking spray. Arrange pear slices
on top of cheese mixture.
Combine lemon juice and honey; brush pear slices with juice mixture. Sprinkle
with rosemary. Bake at 325 degrees for 40 minutes or until a knife inserted in
the center comes out clean. Let cool 10 minutes.
