Too Damn Much Fried Chicken Casserole

It only happens every once in a while where you cant get rid of all the damn fried chicken you got left over. Maybe after that reception for your 3rd wedding to that guy on death row, or something.


3 Tbsp butter
1 carrot, diced
1 onion, diced
3 stalks of celery, diced
1 tsp minced garlic
1 can evaporated milk
1/4 c velveeta
1/4 c shredded cheddar cheese
1/2 bag or so (4 cups) pre-seasoned stuffing (or season your own bread cubes)
1 can evaporated milk
thyme

sage
pepper
salt
bay leaf
6 pices cold fried chicken, deboned and skin removed, torn into bite sized chunks

Melt butter over med-low flame. Add vegetables and herbs to taste. cook until onions are getting soft. Add milk and cheese. Add bread cubes or stuffing mix and stit well, making sure all the bread gets thoroughly wet (but not floating). Add a 1/2 can to a full can of water or chicken broth if needed to make bread moist. Stir in chicken. Let sit for 5 minutes. Check seasoning and add salt and pepper if needed. Put in casserole dish and bake for 1 hour at 350.
