Ukrainian Cottage Cheese Patties
2 c cottage cheese
2 eggs
pinch salt
1/2
c all purpose flour
2-3 tbsp butter
a bowl of sour cream
force the cheese through a sieve with a wooden spoon. Beat in the eggs, salt and
about 6 tbsp flour. With wet hands, shape the cheese mixture into small patties
and dip into remaining flour to dust. Fry them in hot butter until browned on
both sides (do not crowd the pan, cook in batches). Serve hot with sour cream
