Sue Taylor's Spam A 'La King (circa 1950)

1/3 c chopped green pepper
3 Tbsp butter
3 Tbsp flour
1/4 tsp salt
1/8 tsp pepper
1 c water
1 c half and half ('single cream' for Brits)
1 chicken bouillon cube
1 12 oz Spam, cubed
1 4oz can (drained) sliced mushrooms
1/4 c pimento (They put pimentos in EVERYTHING in the 1950s.)

In a large saucepan, sauté pepper in butter until tender. Blend in salt, pepper and flour until smooth (making a roux). Stir in milk, water and bouillon cube. Cook over medium-low, stirring, until bouillon is dissolved and mixture comes to boil and thickens. Add Spam, mushrooms and pimento. Cook 3 minutes more. Serve over toast or rice.
