SPAM Holiday Firecrackers

Ingredients
- 1 (12-ounce) can SPAMŽ Lite
- 1 (8-ounce) package Monterey Jack cheese
- 1 (16-ounce) package frozen phyllo pastry, thawed
- 1 1/2 cups sliced, pickled jalapeno pepper

Directions
Cut SPAMŽ Lite into 6 slices, and cook in a nonstick skillet over medium heat; drain
well. Cut each slice into 6 strips. Cut cheese crosswise into 12 slices; cut each
slice into 3 strips. Place 1 sheet of pastry on a flat surface (keep remaining pastry
covered with a damp towel). Lightly coat pastry sheet with cooking spray. Repeat
procedure with 2 more pastry sheets and cooking spray. Cut pastry stack in half
lengthwise; cut each portion into 3 pieces. Repeat procedure with remaining pastry
sheets and cooking spray. Place 1 SPAMŽ Lite strip, 1 cheese strip, and 3 jalapeno
pepper slices on each pastry square. Starting with long end, roll pastry around
SPAMŽ, cheese, and pepper slices. Twist ends to seal; place on baking sheet. Freeze 1
hour. Bake at 400°F for 12 minutes. Tie ends with chives, if desired.
